Battletown Inn Yellow Squash is an easy dinner. Made with 7 small yellow squash, 1 small onion, diced, 1/2 c. half and half, 1/4 c. cracker crumbs and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Boil squash in salted water until tender.
Drain and mash. Grease 1 1/2-quart baking dish and set aside.
Preheat oven to 350Β°.
Saute onion in butter.
Add half and half and cracker crumbs.
Mix with squash and pour into casserole.
Top with additional crumbs and dot with butter.
Bake 30 to 40 minutes or until top browns.
