Barley and Mushroom Casserole
Barley And Mushroom Casserole is an moderately easy dinner. Made with 1/2 lb. mushrooms, sliced, 6 tbsp. butter, divided, salt, pepper and marjoram to taste, 2 c. barley and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute mushrooms in half of the butter.
Remove mushrooms from skillet and season with salt, pepper and marjoram.
Brown barley and chopped onions in remaining butter.
Add mushrooms to the barley and chopped onion mixture and put into a buttered casserole.
Cover with chicken broth and bake covered for 2 hours at 300Β°.
Add more chicken broth during baking, as needed.
Adjust seasoning, as needed.
Serves 8 to 10.
