Barclay's Herbed Chicken
Barclay'S Herbed Chicken is an moderately easy dinner. Made with 4 to 6 chicken breast halves or thighs (without skin), 1 can cream of chicken soup, 3/4 c. white cooking wine, 1 small can mushrooms, sliced or stems and pieces and 1 can water chestnuts, sliced, this recipe delivers authentic, satisfying flavors. Sprinkle chicken with salt and pepper and brown well in margarine.
Place chicken pieces in baking pan (9-inch square or 9 x 13-inch cake pan).
Let drippings cool a bit and add soup and wine, stirring until smooth.
Add remaining ingredients and bring to a boil over medium heat.
Pour over chicken pieces. Bake in 350Β° oven for 25 minutes, covered, and 20 minutes, uncovered.
Serve with rice.
