Beat eggs until light and foamy.
Add sugar, oil, zucchini and vanilla; mix well.
In a separate bowl, mix flour, baking powder, salt, cinnamon and soda.
Add to zucchini mix and blend.
Add nuts.
Bake in 2 greased loaf pans at 350Β° for 1 hour.
