Banana Nut Cake
Banana Nut Cake is an moderately easy dinner. Made with 1 3/4 c. plain flour (swans down cake flour), 1 tsp. baking powder, 3/4 c. butter (scant) or 1 1/2 sticks butter or margarine, 1 1/2 c. sugar and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cream butter sugar; add eggs one at a time, then mashed bananas.
Baking powder and salt to the flour and sift 3 times.
A little flour to the mixed butter, sugar, eggs and mashed bananas.
Then mix in the buttermilk, a little flour and 1/4 cup of hot water to which baking soda has been added. Dredge the chopped, toasted nuts in the remaining flour and mix in batter.
Then add vanilla.
Bake in 3 layer pans that have been greased and floured lightly.
Bake at 375Β° about 20 minutes.
After layers are cooked and cooled, use 7-minute icing between layers and on top.
Decorate with pecan halves or other ways.
