Banana Nut Bread
Banana Nut Bread is an moderately easy dinner. Made with 3/4 c. margarine, 1 1/2 c. sugar, 1 1/2 c. mashed bananas (3 medium), 2 eggs and 1 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine margarine, sugar, eggs, bananas and vanilla in mixing bowl and mix at medium speed until well blended.
Sift flour, soda and salt and add alternately with buttermilk, mixing well.
Add nuts and blend into batter.
Pour into two loaf pans, approximately 9 x 5 x 3-inch.
Bake at 325Β° for 1 hour or until done.
Yields 2 loaves.
