Banana Muffins
Banana Muffins is an moderately easy dinner. Made with 3 tbsp. vegetable oil, 1 egg, 1/4 c. skim milk, 1 1/3 c. mashed, very ripe bananas (about 3 medium) and 1 c. whole wheat flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 400Β°.
Spray a 12-cup muffin tin or 3 miniature muffin tins (12 each) with vegetable cooking spray or grease lightly.
(Paper liners won't need oil.) Beat egg, oil and milk.
Stir in bananas.
Mix dry ingredients together and stir into banana mixture until flour is moistened.
Fill tins 1/2 to 2/3 full.
Bake about 23 minutes (15 to 18 minutes for small muffins).
Let cool about 15 minutes before removing from pans to let texture firm up.
