Banana Cream Pie
Banana Cream Pie is an moderately easy dinner. Made with 3/4 c. sugar, 1/3 c. all-purpose flour, 1/4 tsp. salt, 2 c. milk and 3 egg yolks, lightly beaten, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a saucepan, combine sugar, flour and salt.
Stir in milk gradually and mix well.
Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
Boil for 2 minutes.
Remove from heat; stir in a small amount into the egg yolks.
Return all to saucepan.
Cook for another 2 minutes, stirring constantly.
Remove from heat.
Add butter and vanilla. Cool slightly.
Slice the bananas into the baked pastry shell. Pour filling over.
Cool before serving.
Refrigerate any leftovers.
Yield: 6 to 8 servings.
