Banana Bread
Banana Bread is an moderately easy dinner. Made with 1 3/4 c. flour, 1 1/4 tsp. baking powder, 1/2 tsp. baking soda, 3/4 tsp. salt and 2/3 c. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Sift together flour, baking soda, baking powder and salt; set aside.
Gradually add sugar to creamed shortening and whip until fluffy.
Add eggs, one at a time and beat until smooth.
Add flour mixture, nuts and lemon rind and blend well.
Add bananas and blend only about 30 seconds.
Pour batter into greased loaf pan (9 x 5-inch) and bake until brown (350Β° oven for 55 minutes).
Turn on rack and cool well.
