Baked Vegetable Meat Loaf is an moderately easy dinner. Spray 5 x 9-inch loaf pan.
In large bowl, combine beef, oats, carrots, celery, onion and parsley.
Combine tomato sauce, egg and seasoning.
Combine meat mixture with tomato sauce mixture just until mixed.
Lightly spoon into loaf pan.
Bake in 375Β° oven for 50 to 60 minutes.
Allow to stand for 5 minutes, then slice into 6 pieces.
