Baked Squash Casserole
Baked Squash Casserole is an moderately easy dinner. Made with 3 lb. yellow squash, 1/2 c. chopped onion, 1/2 c. cracker meal or bread crumbs*, 2 eggs, slightly beaten and 1 stick oleo or butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil cut up squash until tender.
Drain and mix with all ingredients, using only 1/2 of the butter.
Pour into a greased 1 1/2-quart baking dish.
Melt remaining butter.
Pour over top and sprinkle with crumbs.
Bake at 375Β° for about an hour.
