Baked Squash Casserole
Baked Squash Casserole is an moderately easy dinner. Made with 2 lb. zucchini or yellow summer squash, 3 tbsp. chopped onion, 3 eggs, beaten, 2 tsp. parsley flakes and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Slice squash in 1/2-inch pieces.
Boil 3 minutes or until tender.
Drain; add onion, eggs, cheese and seasonings.
Mix until well blended.
Pour into 1-quart buttered casserole.
Mix butter and crumbs; sprinkle over squash.
Bake at 350Β° for 35 to 40 minutes until browned.
