Baked Squash
Baked Squash is an moderately easy dinner. Made with 3 lb. yellow summer squash, 1/2 c. chopped onion, 1/2 c. bread crumbs, 2 eggs, beaten and 1/2 c. butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut up squash.
Boil until tender (or cook in microwave). Drain and mash.
Add all ingredients except half of butter.
Melt that and pour over mixture and sprinkle with cracker crumbs.
Bake a 375Β° for 1 hour or until brown.
