Baked Squash
Baked Squash is an moderately easy dinner. Made with 2 1/2 lb. yellow squash, 1 egg, beaten, 1 c. bread crumbs, divided, 4 tbsp. chopped onion and 4 tbsp. soft margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cube and cook squash until tender; drain and mash.
Add beaten egg, 1/2 cup bread crumbs, onion, margarine, sugar, salt and pepper to taste.
Mix well and pour into a greased 7 x 11-inch casserole dish.
Sprinkle with remaining bread crumbs.
Bake at 350Β° for 20 to 30 minutes, until lightly browned and bubbly.
