Cut eggplant crosswise into 8 (1/2-inch) slices and peel. Brush each slice with melted butter.
Add remaining butter, salt and pepper to bread crumbs.
Dip slices into buttered crumbs. Bake, uncovered, on a baking sheet in a 450Β° oven for 18 minutes. Serves 4.
