Baked Pancake
Baked Pancake is an moderately easy dinner. Made with 1/4 c. butter or margarine, 1/2 c. flour, 1/2 c. milk, 2 eggs, slightly beaten and ground nutmeg, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Heat oven to 425Β°.
Melt butter in 10 to 12-inch skillet (preferably cast-iron variety).
Combine flour and milk; beat lightly (okay if lumpy).
Add slightly beaten eggs.
Pour into skillet.
(Recipe turns out best if butter is still quite warm.) Sprinkle with nutmeg lightly.
Place in heated oven.
Bake 10 to 12 minutes.
Recipe should rise around edges and puff slightly in middle.
Serve immediately sprinkled with powdered sugar.
May squeeze lemon or serve with jam.
