Wash fish thoroughly.

Rub inside and out with salt and pepper.

Prepare highly seasoned bread or mushroom force meat. Stuff.

Lay the fish straight in the cheesecloth with the back up, to resemble a live fish.

Cover tail with strip of brown paper to prevent burning.

Lay strips of bacon about 2-inches apart across fish.

Bake uncovered at 350Β° for about 40 minutes.

Baste every 10 minutes with 1/2 cup hot water and 2 tablespoons butter or a Spanish sauce.

When ready to serve, remove paper from tail. Garnish with parsley, tomato slices, lemon and pickles.

Make eyes of small stuffed olives.

Serve with tartar or Spanish sauce.
