Baked Duck with Mushroom Rice
Baked Duck With Mushroom Rice is an moderately easy dinner. Made with 1 mallard duck, 1 large onion, sliced into chunks, 1 envelope french onion dry soup mix, 2 c. brown rice and 2 small cans mushroom, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Pick and wash duck thoroughly.
Rub 1/2 dry soup mix inside duck.
Stuff onion inside duck.
Rub rest of soup mix on outside of duck.
Lay duck on heavy-duty tinfoil and cover.
Place in pan and bake slowly (approximately 300°) until duck is tender (2 to 3 hours).
Approximately 1 hour before duck is done, combine mushrooms, rice and soup in baking dish and bake at 300° for 1 hour.
When duck is cool, remove meat from bone and add to rice mixture.
Salt and pepper to taste.
Return to oven for approximately 15 minutes to combine flavors.
