Combine eggs, sugar and salt.
Slowly add milk and vanilla, blending well.
Pour mixture into a 1-quart casserole or individual custard cups; sprinkle with nutmeg.
Place casserole or cups in a shallow pan with a small amount of water.
Bake at 325Β° for 30 to 40 minutes, or until knife inserted halfway between center and edge comes out clean.
Serve warm or chilled.
