Baked Cod
Baked Cod is an moderately easy dinner. Made with 1 lb. cod fillets, cut in 2-inch sq. pieces, 4 medium potatoes, peeled and quartered, 4 medium carrots, scraped and cut into 2-inch pieces, 1 tbsp. lemon juice and 1 tbsp. margarine, this recipe delivers authentic, satisfying flavors. Preheat oven to 375Β°.
Slightly grease a 13 x 9-inch baking dish.
Put fish pieces into the dish and sprinkle with lemon juice.
Place carrots and potatoes between pieces and place dabs of margarine and pieces of potato over fish.
Season with salt and pepper.
Sprinkle cheese over all.
Cover and bake 1 hour.
Serve garnished with chopped parsley.
Yields 4 servings.
