Baked Beans with Maple Syrup

Wash and pick over beans.
Cover with cold water.
Add soda and soak for 8 hours or overnight.
Rinse beans and boil in fresh water until skins wrinkle, 8 to 10 minutes.
Drain off bean water and set aside.
Place whole onion in bottom of bean pot or 3-quart baking casserole dish with lid.
Add beans, syrup, salt and mustard.
Cover beans with the bean water.
Bake for 6 to 7 hours in a 300° to 325° oven.
Check and add water as needed.
