Baked Acorn Squash
Baked Acorn Squash is an moderately easy dinner. Made with 2 medium acorn squash, lemon juice, 4 tbsp. brown sugar, butter or margarine and 4 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut squash in half, scoop out seeds and spread butter over cut wedges.
Place cut side down in a greased baking dish.
Bake at 400Β° for 30 to 40 minutes or until tender.
Turn cut side up; brush with lemon juice.
Place 1 teaspoon butter in each cavity. Sprinkle 1 tablespoon brown sugar over each acorn squash half; sprinkle with coriander.
Return to oven and bake about 5 minutes or until sugar has melted.
