Bacon Fettucini
Bacon Fettucini is an impressive dinner. Made with 6 slices bacon, cut in 3-inch pieces, 1 tsp. olive oil or regular oil, 3/4 c. chopped onions, 1 large red pepper, chopped and 1/4 tsp. fennel seed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook bacon in olive oil; remove and save.
Add onions, pepper and garlic.
Saute 3 to 5 minutes.
Add spices except salt.
Cook 2 to 4 minutes more.
Add chicken broth; cook 5 more minutes. Transfer all to blender and purΓ©e; return to pan and add cream. Simmer 4 to 5 minutes.
Add Blue cheese.
Melt over low heat. Cook fettucini in water with salt.
Drain and pour into bowl. Toss with sauce.
Top with bacon and Parmesan cheese.
