Avocado-Grapefruit Salad
Avocado-Grapefruit Salad is an moderately easy dinner. Made with 4 grapefruit, 3 medium avocados, 8 c. torn leaf lettuce, 1/2 c. olive oil and 3/4 c. white wine vinegar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Peel grapefruit; section and seed over a bowl, reserving juice.
Peel and slice avocados.
Immediately combine juice, grapefruit sections and avocado slices in bowl; toss gently. Cover and refrigerate up to 2 hours.
Drain and toss with lettuce in a serving bowl.
Combine olive oil and remaining ingredients in a jar.
Cover tightly; shake vigorously.
Serve with salad.
