Autumn Soup
Autumn Soup is an moderately easy dinner. Made with 1 lb. ground beef, 2 to 3 tbsp. cooking fat or oil, 1 c. chopped onions, 4 c. hot water and 1 c. cubed raw carrots, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In soup kettle over medium heat, brown beef slowly.
Add onions and cook 5 minutes.
Loosen meat from bottom of pan.
Add water, carrots, potatoes, salt, pepper, meat extract, bay leaf and basil.
Bring to boil.
Reduce heat and simmer 20 minutes.
Add tomatoes and simmer 10 minutes longer.
Makes 6 servings.
