Aunt Bill's Microwave Candy
Aunt Bill'S Microwave Candy is an moderately easy dinner. Made with 2 c. sugar, 1 tsp. baking soda, 1 c. buttermilk, 3/4 c. butter and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine sugar, soda, buttermilk and butter in a large microwavable bowl (mixture bubbles up while cooking).
Cover with plastic wrap; punch holes in wrap.
Microwave on High for 2 1/2 minutes, stir and turn dish.
Continue cooking for 15 minutes, stirring every 5 minutes.
Return to microwave for 2 minutes or until soft ball forms in cold water or it tests 236Β° on a candy thermometer.
(Do not put candy thermometer in the microwave while cooking.)
Add vanilla and beat with electric mixer until soft peaks form.
Watch closely.
Stir in pecans and spread in buttered 12 x 7-inch dish.
Cool; cut into pieces.
