Au Gratin Potatoes
Au Gratin Potatoes is an moderately easy dinner. Made with 3 lb. potatoes, peeled and cut up, 2 tbsp. margarine, 2 tbsp. flour, 2 1/2 c. milk and 1 (8 oz.) box velveeta cheese, cubed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Place potatoes in a 3-quart saucepan; cover with water. Bring to a boil minutes.
While potatoes are draining, make cheese sauce.
In a medium saucepan, melt margarine; slowly flour.
Gradually add milk, stirring constantly.
Cheese cubes in and continue to cook and cheese is completely melted.
Remove from heat and add pimento green onion tops.
In a large casserole, add potatoes.
Stir in cheese sauce and serve while hot.
Adjust milk for a thicker or thinner sauce.
