Asparagus Salad
Asparagus Salad is an moderately easy dinner. Made with 1 tbsp. gelatin, 1/4 c. cold water, 1 can all-green asparagus, 1 c. hot asparagus liquid and 1/2 c. mayonnaise, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Soak gelatin in cold water.
Drain asparagus and reserve liquid.
Measure 1 cup liquid, adding water if necessary, and heat.
Pour over gelatin and stir until dissolved; refrigerate. When partially set, fold in mayonnaise, whipped cream, salt and lemon juice.
Add asparagus and almonds.
Pour into a 5-cup mold and chill until congealed.
Serve with additional mayonnaise that has been whipped with a little lemon juice.
