Asparagus Chinese Style
Asparagus Chinese Style is an moderately easy dinner. Made with 2 tbsp. soy sauce, 1 1/2 tbsp. cider vinegar, 1 tbsp. dark sesame oil or other oil, sprinkling of sugar and 1 bunch asparagus, washed, trimmed and cut diagonally into 1-inch pieces, this recipe delivers authentic, satisfying flavors. Put asparagus in a large, shallow skillet; pour in boiling water.
Return to a boil and cook 5 minutes only; drain thoroughly and chill.
Toss with marinade not more than 1/2 hour before serving or it will turn asparagus dark.
Good for company as can be made 1 or 2 days ahead and served cold or at room temperature.
