Artichoke Squares
Artichoke Squares is an moderately easy dinner. Made with 1/2 c. chopped onion, 1/2 c. water, 4 well beaten eggs, 1/4 c. fine bread crumbs and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook onion in water until tender, about 5 minutes; drain.
In a bowl combine eggs, bread crumbs, salt and pepper, oregano and hot sauce.
Stir in onion, cheese and artichokes.
Spread in well-greased baking dish (11 x 7 x 1 1/2-inch).
Bake in a 350Β° oven for 17 to 18 minutes. (Test at this time, it may need longer.)
Cut in 1-inch squares.
Garnish with pimento strips, if desired.
Good hot or cold.
Makes about 60 small squares.
