Made with 2 (6 oz.) jar marinated artichoke hearts, 1 small onion, finely chopped, 2 cloves garlic, finely chopped, 4 eggs (extra large) and 1/2 c. fine, dry bread crumbs, this recipe delivers authentic, satisfying flavors. Drain marinade from 1 jar artichokes into a small frypan. Drain the other jar.
Chop artichokes fine, discarding any hard pieces; set aside.
Add onion and garlic to marinade and saute until limp.
