Artichoke Heart Rice
Artichoke Heart Rice is an moderately easy dinner. Made with 2 boxes chicken flavored rice-a-roni, 2 jars artichoke hearts (save oil from the artichokes), 2 c. chopped onions, 1/2 c. chopped bell peppers (red and green) and 12 to 18 large green olives or black, cut in slices, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Prepare the rice.
Add the next 4 ingredients to the rice. Combine the mayonnaise and the oil from the artichokes and blend well.
Add to the rice mixture.
Chill and serve garnished with sliced tomato wedges and black olives.
