Artichoke and Rice Salad
Artichoke And Rice Salad is an moderately easy dinner. Made with 1 pkg. mjb chicken flavored rice, 4 green onions, sliced thin, 1/2 green pepper, chopped fine, 12 stuffed olives, sliced and 3 (6 oz.) jars marinated artichoke crowns, cut up, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cook rice as directed (omit butter).
Cool in bowl.
Add onions, peppers and olives.
Mix some of the artichoke liquid (about the amount in one 3-ounce jar) with the mayonnaise and curry powder.
Add mayonnaise and artichokes.
Toss well.
Chill and serve.
Serve 6. It can be made the night before.
