Armadillo Eggs
Armadillo Eggs is an easy dinner. Made with 1 lb. monterey jack cheese, grated, 1/2 lb. hot sausage, slightly browned and drained, 1 1/2 c. buttermilk bisquick mix, 15 to 20 whole jalapeño peppers and 1 pkg. shake 'n bake for pork, this recipe delivers authentic, satisfying flavors. Mix cheese and sausage, then add Bisquick mix in 3 equal parts.
Dough will be stiff.
Knead several minutes and set aside. Slit and seed jalapeño peppers.
Stuff each pepper with a piece of cheese and pinch back together.
Pinch off a piece of sausage mixture and pat into flat pancake.
Place the pepper in the middle and wrap around dough until covered.
Roll back and forth in hands to form egg shape.
Roll each egg in shake and bake.
Eggs can be baked now or frozen.
Bake at 300° for 25 minutes.
