Apricot Squares
Apricot Squares is an moderately easy dinner. Made with 3 c. dried apricots, 1/2 c. water, 3/4 c. granulated sugar, 2 c. all-purpose flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine apricots and water; steam until tender.
Add 3/4 cup granulated sugar.
Cook until thick and tender.
Sift flour, salt and soda together.
Cream butter or margarine, gradually adding 1 cup granulated sugar; beat well.
Blend in dry ingredients.
Stir in coconut and pecans.
Press 3 cups of this crumbly mixture in bottom and halfway up sides of greased 13 x 9 x 2-inch pan.
Bake in a 375Β° oven for 12 to 15 minutes or until it looks golden in color.
Spread apricot mixture over crust evenly.
Sprinkle remaining crumbly mixture on top of apricots.
Bake 20 to 25 minutes.
Cut into squares.
Makes about 1 dozen pieces.
