Apricot Salad
Apricot Salad is an moderately easy dinner. Made with 2 small apricot jello, 2 c. hot water, 2 c. cold water, 2 c. miniature marshmallows and 1 medium size can crushed pineapple, drained, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix first 3 ingredients well and chill until wobbley.
Add marshmallows, pineapple and bananas.
Mix with slightly chilled jello and let chill until firm.
Mix together pineapple juice, sugar, egg and flour.
Cook and stir until thick.
Mix cream cheese and Dream Whip.
Put into cooked and cooled mixture with coconut or nuts.
Makes enough for two 8-inch or 9-inch pans.
