Apricot Salad
Apricot Salad is an moderately easy dinner. Made with 1 (no. 2) can crushed pineapple, 8 oz. pkg. cream cheese, creamed or softened, 1 large can evaporated milk, chilled and whipped, 1/2 c. sugar and 6 oz. pkg. apricot jello, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat pineapple and sugar to boiling.
Remove from heat and add jello and cream cheese.
Mix until cream cheese is dissolved.
Set aside to cool.
When cooled, add ice water and nuts.
Whip chilled can of milk and fold into mixture.
Put in a large mold and chill overnight.
Serves 15.
Preparation: 30 minutes.
