Apricot Salad
Apricot Salad is an moderately easy dinner. Made with 2/3 c. sugar, 2 c. water, 2 small pkg. or 1 large pkg. apricot jell-o, 1 large pkg. cream cheese and 2 small cans crushed pineapple, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix sugar, water and Jell-O; bring to a boil and set aside to cool.
In a bowl, blend until smooth the cream cheese and pineapple.
Add apricot baby food.
Fold into Jell-O mixture, then fold in container of Cool Whip.
Put in a 9 x 13-inch dish. Sprinkle with chopped pecans.
Refrigerate.
