Apricot Salad is an moderately easy dinner. Made with 1 large can apricots, 3/4 c. sugar, 1/2 lb. grated cheddar cheese, 2 tbsp. flour and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix flour and sugar; add to beaten eggs.
Add lemon juice and apricot juice and cook to medium sauce.
When cooled, place layers of apricots, cheese and nuts in bowl.
