Apricot Meringue Pie
Apricot Meringue Pie is an moderately easy dinner. Made with 2 1/2 tbsp. cornstarch, 1 1/2 c. scalded sweet milk, 1/2 c. sugar, 3 egg yolks, beaten and 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Sift together cornstarch and sugar.
Add beaten egg yolks and blend thoroughly.
Add scalded milk slowly.
Cook in top of double boiler, stirring constantly, until thick.
Remove from heat.
Add salt and vanilla.
Fold in 1/2 cup apricots which have been mashed through a sieve.
Cool and pour into cooked shell.
Top with the following meringue.
