Apricot Cake
Apricot Cake is an moderately easy dinner. Made with 2 1/2 c. flour, 2 1/2 tsp. baking powder, 1 tsp. salt, 2/3 c. shortening and 1 3/4 c. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Sift together flour, baking powder and salt.
Cream shortening and sugar, creaming well.
Blend in eggs and egg yolks.
Beat one minute, then add 1/4 of dry ingredients.
Mix well.
Blend in milk. Combine apricot nectar and lemon extract and add alternately with remaining dry ingredients to greased mixture.
Blend thoroughly. Pour into 3 greased, floured pans.
Bake about 25 minutes in 350Β° oven.
