Apricot Bars
Apricot Bars is an moderately easy dinner. Made with 3/4 c. butter or margarine, 1 c. sugar, 1 egg, 1 1/3 c. shredded coconut and 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a large bowl, cream the butter and sugar. Add egg and mix well. In a separate bowl, combine flour and baking powder. Gradually add to butter mixture. Add nuts, coconut and vanilla. Mix well.
Press 2/3 of the dough into a greased 13 x 9 x 2-inch baking pan. Spread preserves on top. Crumble remaining dough on top of preserves.
Bake at 350Β° for 30 to 35 minutes until golden brown.
Cool on wire rack. Cut into 36 squares.
