Apricot Bars
Apricot Bars is an moderately easy dinner. Made with 3/4 c. butter, at room temperature, 1/2 c. granulated sugar, 1/3 c. firmly packed light brown sugar, 2 c. all-purpose flour and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 375Β°.
Grease 9-inch square pan.
In medium bowl, beat butter until creamy.
Stir in sugar and brown sugar. Add flour, salt and baking soda.
Stir until mixture is crumbly. Set aside 1 cup of crumb mixture for top.
Press remaining mixture into pan.
Stir lemon juice into apricot preserves.
Spread into pan, leaving a 4-inch border around all edges.
Sprinkle preserves with remaining 1 cup crumb mixture.
Bake 35 to 40 minutes until browned.
