Apple Ring Cucumber Pickles
Apple Ring Cucumber Pickles is an moderately easy dinner. Made with cucumbers (approx. 2 gal.), 2 c. lime, 1 small bottle red food coloring, 1 tbsp. alum and 1 c. apple cider vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Peel big cucumbers (too big for anything else).
Slice thick enough to make a good ring.
Cut out the centers.
This will be about 2 gallons of cucumbers.
Place slices in a stone container, sprinkle 2 cups of lime over them, add enough water to cover and let stand 24 hours.
Drain and wash well, cover with ice; let stand 3 hours.
