Cut pocket in chops bone. Pour milk over bread crumbs.
Stir in apples, raisins, salt, the sage and melted butter.
Stuff each chop with about 1/4 cup of filling. Brown chops in shortening
Pour oil off when browned and season with pepper and salt.
Cover tightly and simmer for 45 minutes to an hour.
