Apple Latkes
Apple Latkes is an moderately easy dinner. Made with 2 eggs, well beaten, 1 1/2 c. orange juice, yogurt or milk, 2 c. flour, 1 tsp. baking powder and 1/4 to 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Mix eggs with orange juice, yogurt or milk in a bowl.
In a separate bowl, combine flour, baking powder, salt and sugar.
Add dry ingredients to the egg mixture along with the apples.
Heat a thin layer of oil in a skillet.
Put 1 large tablespoon of batter in pan at a time.
Cook about 2 minutes on each side until golden brown.
Drain on paper towels.
