Annie's Tofu Loaf
Annie'S Tofu Loaf is an moderately easy dinner. Made with 1 block firm tofu, 2 eggs, well beaten, 1 tsp. salt, 3/4 c. mayonnaise and chopped vegetables (grated carrots, dried mushrooms, water chestnuts), this recipe delivers authentic, satisfying flavors. Squeeze excess water out of tofu and mash in a large bowl. Add remaining ingredients.
Mix well and pour into a greased 8 x 8-inch pan.
(Use butter or margarine to grease pan.)
