Anadama Bread
Anadama Bread is an moderately easy dinner. Made with 1/2 c. yellow cornmeal, 2 c. boiling water, 2 tbsp. shortening, 1 c. molasses and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Stir cornmeal into boiling water in a large bowl, adding the cornmeal very slowly.
When mixed, add shortening, molasses and salt.
When lukewarm, add 1 package yeast dissolved in 1/2 cup warm water.
Add the flour, enough to make a stiff dough. Knead well and put in warm place to rise until doubled (about 1 hour).
Knead again.
Shape into 2 loaves and let rise again until light (about 1/2 hour).
Bake for about 45 minutes at 375Β°.
Turn out of pans and brush with melted butter.
