Amy Smith's Angel Pecan Pie
Amy Smith'S Angel Pecan Pie is an moderately easy dinner. Made with 20 crushed ritz crackers or 16 crushed waverly crackers, 1 c. chopped pecans, 1 c. sugar, 1/4 tsp. cream of tartar and whites of 3 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix beaten eggs and add cream of tartar.
Beat until stiff and gradually add sugar, then fold in pecans, wafers or Ritz and vanilla.
Grease 9-inch pie pan.
Put in preheated oven at 325Β° for 35 minutes.
Take out and cool.
Mix 1/2 pint whipping cream and 1/2 teaspoon vanilla.
Put on top of pie.
Sprinkle chopped pecans on top of pie.
