Aloha Sweet Potatoes
Aloha Sweet Potatoes is an easy dinner. Made with 4-5 med. sweet potatoes, 1/2 c. butter, 1 c. brown sugar, 1/2 c. water and 1/4 c. shredded coconut, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Boil sweet potatoes in their jackets until tender, about 25 mins.
Let cool, then peel and cut into slices 1 1/2 inch thick. In a large skillet melt butter.
Stir in brown sugar and water and cook on med. heat about 5 min.
Reduce heat and add sweet potatoes to skillet.
Cook gently; tossing lightly until sweet potatoes are glazed.
Sprinkle with coconut before serving.
Makes 8 servings.
